Sommelier (Restaurant Zén, Singapore)

Restaurant Zén, Singapore’s Three Michelin Star restaurant under the globally celebrated Frantzén Group, is seeking a Sommelier to curate and elevate the wine experience that complements our distinctive Nordic-Asian tasting journey.
Housed within a beautifully restored heritage shophouse in the heart of Singapore, Zén delivers a multi-level dining experience blending Nordic craftsmanship with Asian flavours. As Head Sommelier, you will be the guardian of our cellar and an integral part of our service leadership team—ensuring every pairing, pour, and presentation meets the highest international standards.
About the Role
You will oversee all aspects of Restaurant Zén’s wine program—from procurement and curation to service and guest engagement. Working closely with the Beverage Director, Executive Chef, and service leadership, you will design and execute wine pairings that enhance our tasting menu, guide guests through memorable wine experiences, and mentor a dynamic sommelier team in pursuit of excellence.
What We’re Looking For
Proven Wine Expertise
- Extensive sommelier experience in Michelin-starred or luxury fine dining environments.
- Deep knowledge of global wine regions, producers, and vintages, with a refined palate and technical proficiency in wine service.
Leadership & Mentorship
- Demonstrated ability to train, motivate, and inspire a sommelier team to deliver world-class standards.
- Commitment to nurturing talent and fostering a culture of learning, curiosity, and respect.
Guest-Focused Professionalism
- Exceptional communication and storytelling abilities that create memorable, educational, and enjoyable wine experiences.
- Confidence in handling VIP guests and bespoke requests with discretion and grace.
Operational Acumen
- Strong understanding of wine inventory management, cost control, and cellar maintenance.
- Familiarity with ordering systems, supplier relationships, and compliance with licensing and storage regulations.
Collaborative Mindset
- A genuine team player who works seamlessly with chefs, service staff, and management to deliver a unified guest experience.
Key Responsibilities
- Curate and manage Restaurant Zén’s wine list and cellar, ensuring the selection reflects the restaurant’s identity and standards.
- Design and execute thoughtful wine pairings that complement the tasting menu.
- Lead, train, and mentor the sommelier and service team in wine knowledge and service excellence.
- Manage supplier relationships, purchasing, and cost controls to maintain optimal inventory and profitability.
- Engage guests with confidence, offering expert recommendations and elevating the overall dining experience.
- Uphold all regulatory and safety standards related to wine service, storage, and alcohol licensing.
- Collaborate with the Beverage Director and Executive Chef on menu development, pairings, and beverage programming.
- Represent Restaurant Zén at tastings, trade events, and media opportunities as a brand ambassador.
